As you may have seen, we have a large family. That said we are not able to eat out all the time, or ever. So when I ask my wife what she would like for her birthday dinner she always says, “Alice Springs Chicken from the Outback.” So we have made a very close copy cat recipe and we save a lot of money. For us to make this meal for 9 people it costs as much as 1 meal at the Outback. So here is our copy cat Alice Springs Chicken.
Copy Cat Alice Springs Chicken
8 Boneless Chicken Breasts
Honey Mustard Sauce, recipe follows
1/2 lb bacon, cooked and crumbled
Onions and Mushrooms, Sauteed
3 cups shredded Colby or Monterey Jack Cheese
Marinade your Chicken breasts with olive oil, salt and pepper. Grill until internal temperature reaches 165 degrees. Garnish chicken with bacon, onions and mushrooms. Drizzle honey mustard sauce over chicken and sprinkle with cheese. Bake at 350 degrees until cheese has melted. Enjoy!
Honey Mustard Sauce
3/4 cup Dijon Mustard
1/2 cup mayonnaise
1/2 cup honey
1/8 tsp ground red pepper
1/8 tsp garlic
1/8 tsp salt
Combine all of these ingredients and drizzle over your cooked chicken breasts.
